Here are two shmups. Arachnos is similar to Gradius with lots of configuration options. Zeldarius is what you get when you combine Zelda with a spaceship game.
Arachnos
Arachnos is a really nice Gradius style spaceship shooter. You have all the standard weapons from Gradius including "Multiples", which are orbs that float by your ship and act as additional guns. There are multiple levels that have different graphics and end in a big boss battle. Some levels have a scrolling section where you can scroll the screen up and down. This game also surprised me by having enemies sometimes appear behind you. But they always indicate this with an arrow.
I also recommend checking the Config menu. This game has lots of configuration options. You can restart from an unlocked stage, difficulty level, lives and starting equipment. This game has two game modes. Item mode is when enemies drop powerups that immediately upgrade your ship when collected. Capsule mode is similar to Gradius where enemies drop capsules and you can select what powerup you want by pressing a key. This game also has a really neat ability to record a replay. At any point when watching the replay, you can press Esc and select "Play Here" to start playing the game at that point in the replay.

Zeldarius
Zeldarius is a very fun combination of Zelda and a shmup that was created using Game Maker in 2002. Most of the graphics and enemies were taken from the nes Zelda games. It's also interesting how each enemy wave is timed to the music. But it's Zelda and a shump, what more can you ask for?

EASTER EGGS:
(posted by Anonymous on TIGSource)
Warp in Mission 1 - Toward the end of Mission 1, many tornadoes will move across the screen horizontally. Find the one moving more slowly than the others (it moves left to right) and touch it with your ship. You will warp to Mission 3.
30-life code - At the title screen, before pressing to start the game, press the following keys: Up, Up, Down, Down, Left, Right, Left, Right, ‘b’, ‘a’. Then press to start the game. You should have 30 lives at the beginning of Mission 1. Note that you cannot use this code and the 9-bomb code at the same time.
9-bomb code - At the title screen, before pressing to start the game, press the following keys: ‘u’, ‘p’, ‘w’, ‘a’, ‘n’. Then press to start the game. Every new life you get should start with 9 bombs. Note that you cannot use this code and the 30-life code at the same time.
Missing-man formation - If you beat Mission 6 with fewer lives than you started the game with (3 or 30, depending on whether you used the 30-life code), the group of five planes will fly a “missing man” formation.
Perfect mission reward - If you finish any mission without letting a single enemy escape destruction, you will get a “Perfect” message on the screen and start the next mission with the maximum number of boomerangs.
