Microsoft is updating Win11 to comply with the European Union's Digital Market Act -- Win11 users in countries with the DMA will be able to uninstall Edge etc. The update is available for Insiders in the Release Preview channel, and will be released to non-Insiders later, assuming there are no major problems with the update. Neowin published a How-To guide showing how after installing that update anyone can now uninstall Edge, regardless your location.
You'll 1st have to install the update, KB5032288, which is not currently listed in the Microsoft catalog for downloading. You can either join the Insider program's Release Preview channel, though I've no idea if the update will be offered to folks not in the targeted EU countries, or follow the directions here [Note the site is in German so you might need to use browser translation]:

Next you'll have to download & use ViVeTool -- at the command prompt running as admin vivetool /enable /id:44353396
. Then after restarting Win11 you need to edit the registry so Windows thinks it's in France, or some other targeted country, and that it's running the Release Preview version of Win11. After another restart you should be able to uninstall Edge.
